Crab Latkes

(too small to count as "cakes," really) Archer's from SFO; he likes seafood.

1 lb. lump crab meat, cooked
1/4 c. onion, finely minced
1/4 c. celery, finely minced
1 egg
1/4 c. mayo
3/4 c. bread crumbs, as needed
1 Tbsp Old Bay
1/2 tsp dry mustard
1/4 tsp Worcestershestershire sauce
1-2 Tbsp butter

Combine all the ingredients except the bread crumbs and butter.

Add the bread crumbs (start with 1/2 cup), using only enough to hold the ingredients together.

To make a latke, scoop up 1 Tbsp of the mixture and form into a ball, then flatten.

Heat 1 Tbsp butter in large frying pan over medium heat. Fry latkes until golden brown, about four minutes per side. Watch that they don’t overcook. Fry in two batches if needed.

Serve with cocktail sauce. Makes about 24.
